Spring Rolls

These are some of the best wraps you could have, the soft wrap with all the flavor inside with the peanut sauce on the side finishes the dish we hope you enjoy our spring rolls. this makes 12

INGREDIENTS\

Rice Paper-8 inch


1 lb Chicken Breasts, Boneless, skinless

2 tbsp of Soy sauce

1 Cucumber

3 Large carrots peeled diced

1 medium red bell pepper (optional)

1 cup Cabbage , shredded

1/2 cup Basil, Fresh (about 12 leaves)

Juice from 1 Lemon, fresh

1 oz Rice Noodles/ Vermicelli noodles DRY


PEANUT SAUCE

1/3 cup of Peanut Butter, creamy or chunky

1/2 tsp Sesame or olive oil

1/4 cup of Soy Sauce

3 tbsp Honey

1/4 cup of Water


METHOD

1. Preheat oven to 190 degrees. Place chicken in a baking dish sprayed with cooking spray. Cover and bake 25-30 minutes or until cooked through. Remove from oven, cool and shred into bite sized pieces and those them in to the soy sauce

2. Place one bundle of noodles in a bowl, pour boiling water to cover. Let sit for 20 minutes and remove from water to cool.

3. Set up the assembly line with all filling ingredients.

4. In a large shallow dish soak rice paper wrap in warm water for about 30 seconds just until limp.
